Liberalia

Liberalia is a family owned vineyard located in the prestigious area of the Denominación de Origen Toro, in the province of Zamora, Spain.

Liberalia started its production of singular and high quality wines in the year 2000. Previously and since 1996, Juan Antonio Fernández, the owner, faithful to his career as agricultural engineer, acquired and organized the vineyards, whose ages range between 30 and 100 years old.

The vineyard is located in fields where the traditional crop has been the vine.

The variety is Tinta de Toro, which is an adaptation to the terroir of the variety Tempranillo or Tinto Fino.

 

The harvest is done following traditional ways of recollection. The home-produced crop is done at dawn and the grape is placed in twenty-kilo plastic containers. Small goods vehicles take the containers at noon so that the wine-making process is done in a way that permits the berry to remain faultless and fresh. A group of experts receive the home-grown and selects it, getting rid of the inadequate bunches as well as vegetal impurities which might have not been eliminated during the first selection process that took place in the fields during the grape harvest.

The alcoholic fermentation process takes place at a controlled temperature, which ensures that the must does not reach high temperatures. This prevents the appearance of undesired bouquets in the future wine. Once these fermentation processes are finished, the wine is conducted in the stainless installation by its own gravity, in such a way that guarantees the quality and wholeness of the wine, thus avoiding conduction processes by means of pressure pumps.

Wines which are intended for vintage and ageing go into large barrels made of French and American oak which are located in small groups in a ten meters underground cellar. The special features of these casks guarantee a low constant temperature during all year long, and a relative humidity of 65 and 85 %. The casks used in our vineyards are Bordelesas with 225 liters capacity or 500 liters in some occasions. We are always trying out new barrels; however, the total number of casks has been defined after meticulous analysis and observations about the wood suitability required by our wine. Therefore and as a result of the analysis of wine and barrels we are using three types of french barrels, one for American oak and two for French oak.

A musical installation accompanies the wine during barrel-ageing. Johann Sebastian Bach and Georg Friedrich Händel provide harmony and peacefulness which are fundamental throughout this delicate process. In that sense, Juan Antonio, in specific days, and according to the atmosphere, the direction of the wind, and his own mood, performs classical music in the vineyards, providing the grapes with a touch of sensibility and energy necessary to develop later on a well-balance maturation process.

Before being bottled, Liberalia wines pass without filtration to the clarification processes which is made with natural egg white, to eliminate and sweep away solid particles in order to obtain splendid purity and a bright and vivid shine.
